Let’s get cooking

Method

  1. Peel the potatoes, cut into 2 cm cubes and toss with 20 ml oil and 2 g salt.

  2. Preheat the oven to 200°C. Roast at 200°C for 30–35 minutes, turning halfway, until tender and golden.

  3. Mix the minced beef and minced pork, breadcrumbs, milk, eggs, chopped garlic and parsley, 4 g salt and the pepper. Rest in the fridge for 15 minutes.

  4. Shape about 24 meatballs, 3 cm across, coat in the flour and brown in batches in a small pan with 300 ml oil at about 175°C. Drain.

  5. Sauté the chopped onion, pepper and carrot in the remaining 30 ml oil for 10 minutes.

  6. Add tomato and cook for 8 minutes.

  7. Add stock, meatballs and peas and add the remaining 2 g salt, allowing for the stock, and simmer for 12–15 minutes until the meatballs reach 71°C in the centre. Serve with the roasted potatoes.
