Let’s get cooking

Method

  1. Preheat the oven to 175°C. Peel and core the apples.

  2. Beat the three eggs with 220 g sugar until increased in volume. Mix in the natural yoghurt, sunflower oil and the lemon zest and juice.

  3. Sift the flour with the baking powder and fold in without overmixing. Add half the apple, diced.

  4. Pour into a 22 cm tin lined with baking paper. Slice the remaining apple, arrange on top and sprinkle with the reserved 30 g sugar.

  5. Bake at 175°C for 48–52 minutes. Check that a skewer inserted into the sponge comes out without raw batter. Bake a little longer if needed.

  6. Cool in the tin for 15 minutes, then transfer to a wire rack.
