Method

  1. Put the walnuts and parsley in the dry bowl. Chop for 5 seconds at speed 5; check the texture and add a few seconds if needed. Set aside on a plate.

  2. Put the milk, onion, Gouda, blue cheese, butter and cream cheese in the bowl. Mix for 30 seconds at 37°C, speed 8. Stop the machine, scrape down with the spatula and mix for a few more seconds until smooth.

  3. Line a deep mixing bowl with food-safe cling film and spoon in the mixture. Wrap and refrigerate for about 4 hours, until firm enough to shape.

  4. Use the cling film to shape a ball, unwrap and roll in the chopped walnuts and parsley until coated. Place on a plate and serve in small portions.
