Finely dice the red onion, green pepper, red pepper and yellow pepper. Soften in the olive oil with the salt for about 12–15 minutes until tender.

Pat the cooked octopus dry and cut into roughly 5 mm pieces. Add to the vegetables and sauté for 2 minutes. Remove and cool for about 15 minutes.

Divide the mixture and Gouda between the 16 empanadilla pastry discs. Fold, seal with a fork and brush with the beaten egg.

Preheat the empty air fryer for 5 minutes at 180°C. Cook two batches of eight spaced-out turnovers for 8–10 minutes at 180°C, turning after 6 minutes. Check that the pastry is cooked on both sides and the filling hot throughout. Use more batches if they cannot fit without touching.

Rest for 3 minutes and serve four per person.
