- Extra virgin olive oil 25 g potatoes and 15 g birds 40 g
- Thyme 2 g
- Oregano 2 g
- Parsley 3 g
- Black pepper 0.4 g
- Salt to taste 3 g

Preheat the oven to 200°C. Peel the potatoes and cut into 2 cm wedges. Toss with sliced onion, crushed garlic, lemon, thyme, oregano, 25 g oil and salt. Spread on a tray and roast for 30 minutes, turning halfway.

Scatter strips of pork belly over the potatoes. Pat the quail dry, season with salt and pepper and brush with the other 15 g oil. Place on the potatoes and pour the white wine around them.

Roast for another 20–30 minutes until the quail reach 74°C in the thickest part, away from bone, and the potatoes are tender. Rest for 5 minutes and serve two birds per person with the vegetables and parsley.
