Method
-
Finely dice the onion, carrot, red pepper, garlic and mushrooms. Soften in 15 g of the olive oil in a frying pan for 8–10 minutes.
-
Add the minced beef and cook for 5–6 minutes, breaking it up with a spatula. Stir in the tomato, oregano, 1 g of salt and the black pepper.
-
Simmer for about 12 minutes until no loose liquid remains; the beef should be fully cooked, reaching at least 71°C.
-
Heat the remaining 10 g of oil in a saucepan, stir in the flour and cook for 2 minutes. Gradually whisk in the milk and cook for 6–8 minutes until thickened. Season with the remaining gram of salt and the nutmeg.
-
Bring the water to the boil and cook the lasagne sheets according to their pack. Drain and separate on a clean surface. You can do this while the filling cooks.
-
Spread a thin layer of béchamel in a heatproof dish about 18 × 14 cm and 5 cm deep. Alternate three pasta layers with filling and a little béchamel. Finish with pasta, the remaining béchamel and Gouda; trim the sheets if needed and do not fill to the rim.
-
Preheat the empty air fryer for 3 minutes at 170°C.
-
Cook the lasagne for 15–18 minutes at 170°C until bubbling and hot in the centre, at 74°C. Rest for 5 minutes before cutting into two portions.
